What was not to love? The house was amazing, the beach was incredible, and Rachel & Matt were the greatest hosts one could hope for. They truly made us feel at home, always had advice when we needed it, and adventures that made the trip spectacular. Rachel's massages were out of this world- would highly recommend! Matt cooked us a wonderful dinner and supplied us with groceries (even making an additional run to get more once we realized what we'd truly need). Thank you so much to Rachel & Matt, and to Vicenta, their kind and wonderful housekeeper who, like our hosts, always went above and beyond to make us feel comfortable and welcome. Much love and thanks to you! WE WILL BE BACK 🙂
Chef Mark outdid himself with our private dinner. The antipasto board and the pasta Carbonara were amazing.
We also had Christmas dinner in a packed dining room. Chef Mark put out a spread of chicken , fish , veggies and potatoes rivaled by none. A little bit of heaven on earth.
My boyfriend and I stayed rather unexpectedly with Matt and Rachel over the weekend in Salinas Grandes. They were WONDERFUL hosts! So generous and kind. We didn't plan as well as we should have and didn't realize how remote the location was, so we arrived without food for breakfast in the morning. They reached into their own personal kitchen and provided everything we needed to make a mini smorgasbord! They also provided us with a ride back to "civilization" later in the day to meet up with our colleagues at another hostel. Thank you both so much for your hospitality! We hope to see you again soon!
I had the absolute pleasure of staying at Salt Escapes with hosts, Rachel and Matt, at the beginning of November 2017 for a week. I can say without reservation that this was the best vacation I have been on and cannot say enough about how well we were treated (i.e. SPOILED) by Matt and Rachel. The house that we rented was spotless when we arrived and kept in perfect shape throughout the week, a truly beautiful and modern beach house located 10 steps from a massive black volcanic sand beach that stretched for miles with buttery sand and without rocks to impede runs/walks (A+ beach). There were only a handful of places stretched along the entire beach making it extremely private and very undeveloped. Our activities included daily surfing, sunset baby sea turtle releases into the ocean, lounging poolside, volcano hike (and then sledding/tobogganing down from the peak), massages, a trip to the beautiful city of Leon, and a fishing trip/estuary boat ride. Most of all, our group loved to stick around the beach house and well-kept pool during hot afternoons…and once you arrive at this beautiful hidden gem of a place…you’ll understand why. The personalized touches and services Rachel and Matt provided really made this a unique experience and it would be a crime not to spend some of your hard earned vacation time at Salt Escapes. I don’t know what to say, I do not have one criticism to offer.
What is more, our group of 6 opted in for chef service for 3 meals a day for the full week by head chef, Mark. The manner in which he incorporated local produce and meat...and by locally sourced...I mean from farms just a few kilometers away...was highly impressive and beyond delicious. I made it a point to try every single dish that was served to us and was simply blown away. We also had a gluten allergy and vegetarian in our group, which Mark catered individual dishes to where necessary. We requested more traditional Nicaraguan cuisine (although he caters to wide range of different styles of food too). We are from Toronto and Mark was the head chef at a very well respected restaurant here called 416 Snack Bar so rest assured his culinary skills were second to none.
Do yourself a favour and check this place out as soon as humanly possible. I mean it!!!!
Thanks to Rachel, Matt and Chef Mark for the incredible Christmas dinner last night at Salt Escapes. The trio is obviously on to something special here and we have a few days left to enjoy the amazing accommodations and spectacular beach and ocean. We were originally booked down the beach, and when that didn't work out, a Christmas miracle occurred and they found room for us in their gorgeous rental house.

This place is so healing, Rachel and Matt are so welcoming, accommodating, loving, patient and helpful to every need you might have. The villa, the beach the restaurant are amazing.Mark Ota is an amazing and talented chef, the food was outstanding. I will be back for sure. Our retreat with Nam Do was a huge success.
Salt Escapes is pure magic. Simply put, it is the best vacation I have ever had. I cannot recommend this team enough. They've created the perfect blend of adventure and comfort.
The venue: My group of friends stayed in beautiful Salinas Grande in November. We rented one of their beautiful properties together and opted for daily chef service. We met our airport transfer and he drove us through the Nicaraguan country side, stopping to let us take in some awesome views (Volcanos everywhere!). The venue is remote, but that’s why the Salt Escape team arranges to make your journey there easy. The coolest part of getting there was off roading through the salt flats. Wild horses, trees filled with cacti and tropical flowers. When we arrived the house was beautiful. Over the week we saw how it was maintained incredibly well by the friendly staff. Our rooms were immaculate and full of beautiful warm light. We watched the sun set every day from our porch and fell asleep to the roar of the ocean. We felt disconnected from the rest of the world (even though yes, we had wifi!).
The food: Every day we ate something new, fresh and incredible. This was a tough challenge, given that we were travelling with a strict vegetarian, someone who can’t eat gluten and someone who can’ have nuts. The Salt Escape team arranged for everything and we were constantly surprised by the flavours and selection they provided. I wouldn’t hesitate to opt into the food service again (my mouth is watering as I type this.)
The activities: Surfing daily. Releasing baby sea turtles into the ocean at sun set. Massages by the amazing Rachel. Fishing in the ocean. Touring a nearby estuary. Hiking to a secret beach. A day trip to a historic town. A day trip to a volcano which we hiked up an tobogganed down. Plus lounging by the pool and playing some of the many board games they have on hand. There was something for everyone. We did so much but still left feeling deeply relaxed and deeply changed.
Our time with Salt Escapes was unreal. The team thinks of everything and is so excited to have you fall in love with the culture of Nicaragua the way they have. They really care about the local community and try to showcase local experiences as much as possible. They take pride in embracing local culture and sharing it with you! Rachel, Matt and Mark are key to this experience being what it is. They are lovely people who care about you getting the most out of this experience. You cannot go wrong in their care. We got to go outside of our comfort zone bu felt safe at all times - they create trips that can work for a group of friends, but also for a family.

Salt lodge has five star cuisine, brilliant, imaginative dishes and wonderful hospitality. Right on the beach under a wonderful palapa. You can't go wrong.
The Salt Lodge Restaurant and Salt Escapes is home away from home in Nicaragua. The hosts, Matt and Rachel, understand everything there is to see and do in this beautiful country. While staying there we enjoyed incredible food prepared by Mark, a celebrated chef who hails from one of Toronto's hottest kitchens. It was the perfect mix of new flavours and the comforts of home. We never went hungry and Mark was more than accommodating, he was downright creative, when it came to dishes for the vegetarian and celiac in our group. Have been TWICE this year and will likely make our way back someday soon. Can't recommend it enough!
I previously tasted chef Mark Ota's cuisine at his restaurant back in Toronto and the food quality still holds up. Each meal was like having a metropolitan level of food but all served beach side on a remote part of Nicaragua. No other experience like it.
